The mice were divided into three groups. Of these, the control group received a normal diet, while the other group got high-fat diet, similar to a Western diet. The last group was given a high-fat diet with nitrate supplementation.

Expectantly, mice in the high-fat group gained fat mass and weight. Their sugar levels also rose up. However, all these three markers were lower in the third group that received nitrate. This helped prove that the inorganic compound in the green leafy veggies aids in lowering fat levels in the liver.

In addition to working against the fat accumulation in the liver, researchers noted that rodents who were supplemented with nitrate showed better insulin sensitivity and lower blood pressure. These conclusions were in contrast with rodents on a high-fat diet.

Evidence from the past also reveals that dietary nitrate can help enhance cell metabolism. This is why green leafy veggies may safeguard against metabolic condition like diabetes type II.
